Baking with Brian Gregan

Most people know Brian Gregan as our Director of Sport. What you may not know is that, through his college education and as a professional athlete who has represented Ireland at European and World level competition, Brian is also hoping to represent Ireland at the upcoming Olympic Games. He has gained a wealth of experience and knowledge around wellbeing through his education and his professional career. Brian places a huge focus on wellbeing with students, especially in time like these, and looks at both their mental and physical wellbeing. Brian works closely with students on nutrition and healthy eating so that they can stay healthy and focused on their education, even during tough times like the current Covid-19 pandemic.

One of the programmes that Brian has been running with our students is an online ‘Baking with Brian’ class, where Brian and the students bake health food and snacks that will give them the right nutrition and energy to stay on top of their game no matter if they are studying or participating in sport. Last week they created delicious Healthy Oat and Apple Crumble. A great snack that is full of healthy nutrition and a great energy pick-me-up.

Healthy Oat and Apple Crumble

Ingredients

  • ¾ Cup Old-fashioned oats
  • ¼ Cup Walnuts roughly chopped
  • 1 Tsp Ground Cinnamon
  • 3 Tbsp Maple Syrup
  • 1½ Tbsp Coconut Oil

For the filling

  • 6 Cups Small-diced Apples of choice
  • 2 Tbsp Cornstarch
  • 1½ Tsp Ground Cinnamon
  • ⅛ Tsp Ground Nutmeg

Instructions

  1. Preheat the oven to 180 degrees.
  2. In a mixing bowl combine together the oats, walnuts, cinnamon, maple syrup, and coconut oil. Using your fingers stir until crumbly.
  3. In another bowl, toss the apples with the cornstarch, cinnamon, and nutmeg, until evenly coated.
  4. Transfer the filling to the prepared dish, and gently press down with a spatula. Sprinkle evenly with the oatmeal topping.
  5. Bake at 180 degrees for 25-35 minutes or until the apples are tender and top is crisp.
  6. Enjoy!
